Keto Baked Spinach Mushroom Quesadillas

  • 2ย low-carb tortillasย (or keto wraps)
  • 1 cupย shredded mozzarella cheese
  • ยฝ cupย shredded cheddar cheese
  • 1 cupย fresh spinach, chopped
  • ยฝ cupย mushrooms, sliced
  • 1 tbspย butter or olive oil
  • 1 cloveย garlic, minced
  • Salt & pepper to taste
  • Optional: 2 tbspย cream cheeseย for extra creaminess

Optional toppings:

  • Sour cream
  • Salsa (sugar-free)
  • Guacamole

1๏ธโƒฃ Preheat oven

Preheat oven to 375ยฐF (190ยฐC). Line a baking sheet with parchment paper.

In a skillet, heat butter or olive oil over medium heat.
Add mushrooms and garlic, cook 3โ€“4 minutes until mushrooms are soft.
Add spinach and cook until wilted. Season with salt and pepper. Remove from heat.

  1. Place a tortilla on the baking sheet.
  2. Spreadย half the mozzarella and cheddarย over the tortilla.

  5. Cover with second tortilla.
