Ingredients

  • 2 cups (450g) Greek yogurt
  • 8 oz (225g) light cream cheese, softened
  • 1½ scoops vanilla protein powder
  • ¼ cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
  • 2–3 tbsp zero-calorie sweetener (optional)
  • 1 packet unflavored gelatin (optional, for firmer bars)
  • 3 tbsp warm water
  • Fresh lemon slices or berries for topping

Instructions

  1. Line a small baking dish with parchment paper.
  2. If using gelatin, dissolve it in warm water and let it sit for a few minutes.
  3. In a bowl, blend Greek yogurt and cream cheese until smooth.
  4. Add protein powder, lemon juice, lemon zest, vanilla extract, and sweetener. Mix until creamy.
  5. Stir in the prepared gelatin until fully combined.
  6. Pour mixture into the lined dish and spread evenly.
  7. Refrigerate for 3–4 hours until firm.
  8. Slice into bars and top with lemon zest or fresh berries before serving.
