Ingredients:
- 1 cup walnuts
- ½ cup rolled oats
- 2 tbsp unsweetened cocoa powder
- 1 tsp instant coffee powder
- 8 pitted dates
- 1 tsp vanilla extract (optional)
- Pinch of salt
- 1–2 tbsp water (if needed)
Optional Add-ins:
- 1 tbsp chia seeds
- 2 tbsp dark chocolate chips
- 1 tbsp almond butter for extra creaminess
Instructions:
- Prepare the dates
- If your dates are dry, soak them in warm water for 10 minutes, then drain.
- Blend the dry ingredients
- Add walnuts, oats, cocoa powder, instant coffee, and salt to a food processor.
- Pulse until the mixture becomes a coarse crumb.
- Add dates
- Add the dates and vanilla extract.
- Blend until the mixture sticks together like dough.
- Add a little water if needed.
- Shape the bites
- Scoop out small portions and roll into bite-sized balls using your hands.
- Chill
- Place energy bites in the refrigerator for 30–60 minutes to firm up.
Storage:
- Store in an airtight container in the refrigerator for up to 1 week.
- Freeze for up to 2 months.
