No-Bake Cottage Cheese Brownie Batter Protein Bites

To make these delicious treats you will need to gather a few simple items from your local grocery store. Make sure your ingredients are fresh for the best possible results.

  • 2 cups of low fat cottage cheese
  • 1 cup of rolled oats or oat flour
  • Half cup of high quality chocolate protein powder
  • Quarter cup of unsweetened cocoa powder
  • 3 tablespoons of raw honey or pure maple syrup
  • 1 teaspoon of pure vanilla extract
  • Half cup of mini dark chocolate chips
  • A small pinch of sea salt

Step by Step Method

  1. Start by getting your blender or a food processor ready for use. You want to make sure the container is completely dry before you begin.
  2. Place the 2 cups of cottage cheese into the blender. Turn the power on high and blend the cheese for about one minute or until it looks like a very smooth and thick cream. There should be no lumps or curds left at all because this is what creates that brownie batter texture.
  3. In a large mixing bowl combine your oat flour and the chocolate protein powder. If you only have rolled oats you can blend them into a fine powder before adding them to the bowl.
  4. Sift the unsweetened cocoa powder into the dry mix to ensure there are no clumps of bitter chocolate in your bites.
  5. Add the blended cottage cheese into the bowl with the dry ingredients. Use a large spoon or a spatula to fold the mixture together until a thick dough starts to form.
  6. Pour in your honey or maple syrup along with the vanilla extract and the sea salt. Stir everything again until the color is a uniform dark brown and the scent of chocolate is strong.
  7. Fold in the mini dark chocolate chips. These add a nice crunch and extra pockets of sweetness throughout the brownie bites.
  8. Place the entire bowl in the refrigerator for at least thirty minutes. This chilling time allows the oats to soak up the moisture which makes the dough much easier to handle and roll into balls.
  9. Once the dough is firm use a small spoon or a cookie scoop to take a piece of the mixture. Roll it between your palms to form a smooth ball about the size of a golf ball.
  10. Repeat this process until all the dough is used up. You should end up with about twelve to fifteen bites depending on how big you make them.
  11. Store the finished bites in an airtight container in the fridge. They will stay fresh and delicious for up to seven days.
