- 2 cups cottage cheese
- 3 large eggs
- 1 cup pumpkin puree (not pumpkin pie filling)
- ½ cup rolled oats (or almond flour for lower carb)
- ⅓ cup maple syrup or honey
- 2 tsp pumpkin pie spice
- 1 tsp vanilla extract
- 1 tsp baking powder
- ¼ tsp salt
- Optional: Greek yogurt or whipped cream topping + cinnamon sprinkle
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a 9×9-inch baking dish.
- Blend cottage cheese, eggs, pumpkin puree, maple syrup, and vanilla until smooth.
- Add oats (or almond flour), pumpkin spice, baking powder, and salt. Blend again until combined.
- Pour mixture into the baking dish and smooth the top.
- Bake for 40–45 minutes until the center is firm and lightly golden.
- Let it cool for 10 minutes, then slice and serve with Greek yogurt or a sprinkle of cinnamon.
