🫑 Diabetic-Friendly Stuffed Pepper Casserole

Ingredients (6 servings)

  • 1½ lbs lean ground beef or ground turkey
  • 3 large bell peppers (red, green, yellow), diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 cup cauliflower rice (or cooked brown rice if preferred)
  • 1½ cups shredded cheddar or mozzarella cheese
  • 1 tbsp tomato paste
  • 1 tsp Italian seasoning
  • 1 tsp paprika
  • ½ tsp garlic powder
  • Salt and black pepper, to taste
  • 1 tbsp olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. Heat olive oil in a pan and cook onion until soft. Add garlic and ground beef/turkey, then cook until browned.
  3. Add diced peppers, tomatoes, tomato paste, and seasonings. Cook for 5–7 minutes.
  4. Stir in cauliflower rice and mix well.
  5. Transfer mixture to a baking dish and top with shredded cheese.
  6. Bake for 20–25 minutes until cheese is melted and bubbly.
  7. Garnish with parsley and serve warm.
