Ingredients
For the protein brownie base
- 1 cup oat flour
- ½ cup chocolate protein powder
- ¼ cup unsweetened cocoa powder
- ½ tsp baking powder
- ¼ tsp salt
- 2 large eggs
- ½ cup Greek yogurt
- ¼ cup unsweetened applesauce
- 3 tbsp maple syrup or honey
- 2 tbsp melted dark chocolate
- 1 tsp vanilla extract
- 2–4 tbsp milk, as needed
For the pecan topping
- 1½ cups pecan halves
- ⅓ cup maple syrup
- 2 tbsp natural peanut butter or almond butter
- 2 tbsp Greek yogurt
- 1 tbsp melted butter
- 1 tsp vanilla extract
- ½ tsp cinnamon
- ¼ tsp salt
- 1 egg
- Optional: 1–2 tbsp brown sugar or coconut sugar
Method
- Prepare the oven: Heat oven to 175°C / 350°F. Line an approximately 8×8-inch (20×20 cm) baking pan with parchment paper.
- Make the brownie batter: Whisk together oat flour, protein powder, cocoa powder, baking powder and salt.
- In another bowl, whisk eggs, Greek yogurt, applesauce, maple syrup, melted chocolate and vanilla.
- Combine the wet and dry ingredients. Add milk gradually until you have a thick, smooth brownie batter.
- Spread the batter evenly in the prepared pan.
- Make the pecan topping: Whisk maple syrup, nut butter, Greek yogurt, melted butter, vanilla, cinnamon, salt and egg until smooth.
- Fold in the pecans, then spoon the mixture evenly over the brownie batter.
- Bake for 28–35 minutes, until the brownie center is set and the pecan topping is bubbling and golden. Don’t overbake—the brownie should remain slightly fudgy.
- Cool completely for at least 30–45 minutes before slicing. For cleaner slices, refrigerate for about 1 hour.

✨ For an even higher-protein version
Use ¾ cup protein powder instead of ½ cup and add an extra 2 tbsp Greek yogurt. If the batter becomes too thick, add 1–2 tablespoons of milk.
Best finishing touch: drizzle a little melted dark chocolate over the cooled pecan brownies and sprinkle with flaky sea salt.
