Rich, chocolatey, and soft in the center—this quick protein brownie is perfect when you want a warm dessert without making a whole batch.
Ingredients — 1 serving
- 1 scoop (30 g) chocolate protein powder
- 1 tablespoon unsweetened cocoa powder
- 2 tablespoons oat flour
- ¼ teaspoon baking powder
- 1 tablespoon zero-calorie sweetener, or to taste
- 1 large egg
- 2 tablespoons milk
- 1 tablespoon Greek yogurt
- ½ teaspoon vanilla extract
- 1 tablespoon sugar-free chocolate chips, optional
- 1 teaspoon chocolate spread or peanut butter, optional for the center
👩🍳 Instructions
- Mix the dry ingredients:
In a microwave-safe mug, combine protein powder, cocoa powder, oat flour, baking powder, and sweetener. - Add the wet ingredients:
Add the egg, milk, Greek yogurt, and vanilla. Stir thoroughly until you have a smooth batter. - Add chocolate:
Fold in chocolate chips if using. For a gooey center, place a teaspoon of chocolate spread or peanut butter in the middle and gently cover it with batter. - Microwave:
Microwave on high for 60–90 seconds. Start with 60 seconds and add 10–15 second intervals if needed. The center should look set but still slightly moist. - Rest:
Let the mug cake sit for 1 minute before eating—the inside will continue to set. - Serve:
Top with a little Greek yogurt, berries, powdered sweetener, or a small drizzle of melted chocolate.
💪 Protein
The exact protein amount depends on the protein powder and yogurt you use. With a protein powder containing about 25–30 g protein per scoop, this recipe can get close to 30 g protein.
Tip: Don’t overcook it. A few extra seconds in the microwave can turn a soft brownie into a dry one.
