Ingredients (Serves 4)
- 1½ lbs fresh carrots, peeled and sliced lengthwise
- 2 tbsp olive oil
- 2 tbsp honey
- 1 tbsp melted butter
- 1 tsp garlic powder
- ½ tsp cinnamon (optional)
- Salt and black pepper, to taste
- ⅓ cup dried cherries
- ⅓ cup chopped walnuts
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 425°F (220°C).
- Add carrots to a baking sheet and toss with olive oil, honey, melted butter, garlic powder, cinnamon, salt, and pepper.
- Roast for 25–30 minutes, flipping halfway, until carrots are tender and caramelized.
- Remove from oven and sprinkle with dried cherries, walnuts, and fresh parsley.
- Serve warm and enjoy!
