
Watermelon Blueberry Salad ![]()

Ingredients:
• 7–8 cups seedless watermelon, cubed
• 1½ cups fresh blueberries
• ¾ cup reduced-fat feta cheese, crumbled
• Fresh mint leaves, thinly sliced
• Fresh basil leaves, thinly sliced
Honey Lime Dressing:
• Juice of 1½ limes
• 1 tablespoon extra virgin olive oil
• 1 tablespoon honey or sugar-free honey substitute
• Pinch of salt
Instructions:
In a small jar or bowl, combine lime juice, olive oil, honey, and salt. Shake or whisk until well mixed.
In a large serving bowl, add watermelon, blueberries, mint, basil, and most of the feta cheese.
Drizzle the honey lime dressing evenly over the salad and gently toss to combine.
Top with the remaining feta and extra fresh herbs if desired.
Serve immediately and enjoy chilled ![]()
